  • A recipe that calls for 20 pounds of ripe strawberries, 1.5 pounds of raisins, 1-3 pounds of cane sugar, and two packets of bread yeast.

Strawberry Brandy Mash Process:

  1. Rinse the strawberries well with clean water to prevent the risk of illness from wild yeast or bacteria that may be present on the strawberries. Remove the green tips from the strawberries since the green tops might provide a bitter flavor to the mashed strawberries. Remove any strawberries that are rotten or damaged
  2. Once the tops have been removed from the strawberries, blend them well, making sure to remove any rotting berries. While blending the berries, slowly include the raisins into the mixture, adding a small amount at a time, until the entire 1.5 pounds has been mixed. Remove the pureed strawberries from the blender and place them in a clean, sterilized food-safe container. Making puree requires the use of a brewing bucket with gallon markings to keep track of how many gallons you have left. Place the strawberry puree in your boiling kettle after you have accumulated 2.5 gallons. To the 2.5 gallons of strawberry puree, add 3 gallons of water
  3. Mix well. Obtain a specific gravity reading for the mash
  4. A brix refractometer will be required because the mash will be too thick for a hydrometer. The strawberry mash should have a specific gravity of roughly 1.024, which would give a beer with an alcohol content of approximately 3.5 percent ABV. Fill the container with sugar and keep adding pounds at a time until the initial gravity is 1.054, since this will provide around 8 percent starting alcohol (before distillation). Make certain that you thoroughly stir the mixture after you have added the sugar and before taking another brix reading. Heated to 160 degrees, this should destroy the majority of wild yeast and bacteria in the mash. As soon as the mash reaches 160 degrees, put it in a wort chiller and allow it to cool down to 70 degrees. Starting when the mash reaches 80 degrees, begin creating your yeast starter. Once the mash has cooled to 70 degrees Fahrenheit, it should be transferred to the fermentation vessel. Fill the fermenter halfway with the yeast starter
  5. Sterilize an airlock and place it in the fermenter. Ferment in a dark area at a temperature of 70 degrees. Before or during the process of putting the liquid into a still, strain the liquid and remove any pulp. Make sure there is plenty of head space in the still and that the vapor cone does not become overfilled with liquid. Complete a stripping run at a high temperature
  6. Completing a spirit run with low heat is recommended. Foreshots and heads should be discarded
  7. Hearts should be saved for drinking
  8. And tails should be saved for future feints runs. Fill pint jars with fresh strawberries and decorate with hearts. Allow for a week of maturation before drinking

This recipe is quite simple, and when completed, you will have 2 liters of strawberry flavoured moonshine to enjoy. Preparation time is 5 minutes, and the overall time to finish the project is 20 minutes.


  • The following ingredients: 2 L Moonshine (80 proof)
  • 4 cups Strawberries (thinly cut)
  • Cheese Cloth
  • 3 – 1L mason jars

Every two days, give the jars a good shake to aid with the infusion process. Strain the strawberries through a cheese cloth after they have been in the fridge for 4 weeks.

For this procedure, fresh or frozen fruit is steeped for many weeks in a spirit of your choosing. Filling bottles using a large funnel is a common practice.

Large fruits (such as apples or peaches) should be cut into bite-size pieces.

For the best results, cranberries should be finely minced in a food processor.

Steeping is best done in big glass jars, such as antique canning jars, but any large glass jar will do.

(For this reason, I make use of my collection of old canning jars.) However, any quart-sized or larger jar would suffice.) Add 2-3 cups vodka or brandy, or just enough to cover the fruit, and stir well to combine.

Season with whatever spices you choose.

For at least 4 weeks, place the container on a shelf away from direct sunshine or heat.

After steeping, strain the liquid through several layers of cheesecloth to remove any remaining particles.

Take the remaining flavored alcohol and strain it once more through new cheesecloth or, better yet, coffee filters to obtain a clear liquid that is free of cloudiness and color.

Bringing the liquid to a boil while stirring continually takes about one minute, or until the boiling mixture becomes clear.

(It will take around 1 hour) Pour half of the sugar syrup into the alcohol base and whisk to combine.

Some fruits are quite sour and will need the use of the entire amount of sugar syrup.

Extremely sour fruits (such as cranberries) may require a second batch of sugar syrup in order to get a genuinely sweet liqueur that is truly sweet.

Continue to add syrup until you achieve the desired taste and flavor.

After a few months of resting on the shelf, the liqueurs will be at their finest in terms of flavor (aging).

After one year, they will begin to lose their vibrant color and some flavor, but they will not “go bad” since the alcohol acts as a preservative and prevents them from going bad. I generally have no issue using them up within a year of purchasing them. That’s incredible!

  • 1.5 ounces Cake Vodka
  • 0.5 ounces Whipped Vodka
  • 1 cup water

How to Make

  1. Using half of the strawberries, add half of the sugar on top of the strawberries, and then pour the remaining strawberries on top and layer the remaining sugar on top of that
