I chopped down a tree last summer and stored some apple wood, which I intended to use in a meat smoker this year. This meat has been well-seasoned, and I have plenty of it. There’s also a distillery in LA (Lower Alabama) that produces a product called Conecuh Ridge that contains apples in some way, though I’m not sure how—in the mash, after distillation, during aging?

After barely 24 hours, it has already begun to take on color and the odor has changed. It appears to be fascinating. It is likely that I may try the scorched apple in the near future. mememellowcore

It begins as a pinkish tone and progresses to a rich gold with undertones of crimson. I’ve been leaving it on the burned apple for a year now, and the flavors have almost completely merged, with a small edge still remaining. Within the next six months, the situation should stabilize. I used a different sort of apple wood, and the color did not contain the pinks and reds that other apple woods have, and it took much longer to impart to the whiskey than the others.

The first appeared to be far more attractive in appearance.

I intend to use this wood for a lengthy period of time and see how it matures over the long haul.

Beginning as a pinkish tone, it gradually progresses to a rich gold with traces of red. For almost a year, I’ve been leaving it on the burnt apple. The tastes have melded almost completely, with only a faint edge remaining. After six months, the situation should be completely resolved. My apple wood was a different variety, and the color did not contain any pinks or reds, and it imparted its flavor to the whiskey at a much slower rate than the others.

Initially, it appeared that the first was considerably more attractive.

In the long run, I intend to keep with this wood and observe how it develops over time.

The hue is a light caramel that is becoming darker virtually every day. Despite the fact that it is “quite young” in terms of age, I was astonished by the flavor that the wood and pepper imparted so quickly after tasting it. The apple imparts a very magnificent woody flavor, while the pepper corns impart a powerful “wang” aftertaste to the beverage.

I’ll take them out and observe how they behave over a longer length of time.

White pepper has a considerably milder flavor than black pepper and is thus preferred.

In terms of color, density, and flavor, it is far lighter than a bourbon.

Postbypossum»Mon Oct 24, 2005 11:11 a.m. Postbypossum When I was prepping a gallon of grain-based likker for the oven, I used a mix toasted and charred shavings and bits of applewood, as well as three pink peppercorns, to condition the likker (barley mostly). After only two and a half weeks, the effects were gratifying to see. Pink peppercorns, in my opinion, are far less strong than black peppercorns. Greetings, fellows! Keep an eye on this. OUCH!
